Corn Fritters

  • 2 eggs
  • 1 cup milk
  • 2 cups corn kernels
  • 1/2 cup grated cheddar cheese
  • 1 cup plain flour
  • 2 teaspoons baking powder
  • dash of pepper and salt
  • either fresh or dried herbs such as parsley, chives, basil, a dash to taste

Mix everything together in a bowl. It should have a gloopy batter consistency, not runny like pancakes or thick like muffins.

Heat up some vegetable oil in a (preferably non-stick) pan, and drop in teaspoons or tablespoons of the batter depending on whether you want bite-size or 3-bite size. On a medium-medium hot temp, fry them on one side until mostly set through, then flip and cook the other side. Should be crispy and golden!

Drain on paper towels and then eat 'em. They reheat in the microwave ok if you don't mind them not being crispy anymore.
