Double-Baked Potatoes

How to Make a Double-Baked Potato without the Use of a Microwave (because that's Just Wrong tm), by Heidi

First, make sure you have some tatos in the house. In the store, they call 'em "baking potatoes" because, well, we're gonna bake 'em. Also get some margarine (or milk if you prefer, but I prefer margarine. I guess butter would work. Or skim milk. Who knows? Experiment! Why should I do all the work around here?). And get some mild cheddar cheese, shredded. Though I guess you could shred your own if you like. Or get sharp cheddar. It's a free country. Mostly.

Anyway, if you are going to eat the skins, well, okay, but make sure you scrub the tato before you bake it. I don't eat them, but that surprises no one.

You might want to poke some holes with a fork. In the potato, that is. Nowhere else. This will help the steam escape so you don't have a splody tato mess.

Ok, so.

Heat the oven to 425F. Stick the tato in, right on the rack. Shove it to the back where it's hottest. Bake for one hour. Make sure your kitchen timer doesn't suck. If you have to use the microwave timer, and thus can't bring it to the computer with you, make sure to say to your daughters who are playing video games in the living room, "girls! tell me when this timer goes off, eh?"

After one hour, get a biggish bowl (glass is best), a knife, a fork, the milk and or margarine, and the cheese. Put the cheese in first. Use like a handful or two. Again, experiment. Toss some butter or milk in there. Butter/margarine makes it creamier I think. Then cut a little boat-shaped hole in the tato. Scrape out the yummy tato part. Try not to cut holes in the bottom of the potato. Put the yummy goodness into the bowl, so it will mel the cheese and butter. (er, melt, I mean)

Then mix it up so it's all stuck together in a glob. Shove it all back into the skin. Put it in the oven again, this time in the very front so you don't get burned, and maybe put a pie pan under it, on the rack below. This is because the tato is sort of overflowing out of the skin, and it might fall out a bit.

Then bake for another 25 min or until the top of the tato is all crispy.

It will be super hot. When yo take it out of the oven, split it open so it cools a bit.

Eat with a tall glass of Pepsi, while typing bbs posts in between bites.

Feel happy.
