Oh, and last night's dinner:

New Orleans Red Beans & Rice

• 1 Tbsp olive oil
• 4 links of chicken pesto sausage
• 1 red onion
• 1 green bell pepper
• 2 cans red kidney beans
• 2 bay leaves
• 1 tsp thyme
• 1 tsp cayenne
• 2 tsp dark chili powder
• 4 cups instant rice (2 boil in bags)
• 3 cups water
• Fresh ground pepper

Over medium high heat, brown the sausage, onion, pepper and (oops) garlic, until sausage starts browning. Add beans, bay leaves, thyme, cayenne, chili powder, and water. Cook until thickened.

Meanwhile, boil off the rice. Add it to the bean mix. Grind pepper over it all liberally.
