From the party:

Marinated Potato Salad (NO MAYO!)

• 2 pounds red potatoes (cut in quarters)
• The Vinaigrette (recipe to follow)
• A handful of cherry tomatoes, halved
• 1 small red onion, sliced thinly
• 1 little can sliced black olives
• 1 small handful of fresh parsley, chopped

Boil potatoes until tender, but not mushy, about 15 minutes. (Whoops, I forgot 2 small green bell peppers, sliced thin)

Combine it all and dump the dressing on.

Garlic Vinaigrette:

• 1/3 cup olive oil
• 1/3 cup white vinegar
• 1 Tbsp (or whatever's in the bag) sugar
• A small handful of snipped fresh basil
• A sprinkle of dried oregano
• 1/2 tsp dried mustard
• 2 Tbsp minced garlic
• 2 tsp Dijon

Toss everything together. Pretty and tasty and low fat eaters will still eat it.
