Pyrex Chicken

  • 1 whole chicken
  • Salad dressing (optional)
  • Garlic Salt & pepper

take chicken. Remove wingtips (no meat), neck (no meat) and kidneys (icky). Save for later. Run your hand between the skin and the meat on the breast. If any pads of fat are handy, rip them out.

Grab your salad dressing, drizzle it all over the chicken, especially in the pocket between the breastmeat and skin. rub in gently. Sprinkle garlic salt and fresh ground black pepper all over the chicken. rub gently.

Grab a 9x9 baking dish (metal, glass, whatever). Put a 1-cup oven safe cup [1] upside down in the center of the dish. Stand the chicken in the pan so it is "sitting" on the measuring cup.

Bake in a 375F oven until it's done. (Somewhere between one hour and two.) To carve, cut thighs, drumsticks, and wings off. Cut breasts off. Serve.

Serves 2 to 6-8, depending on the chicken, the eaters, and the side dishes.
