Split Pea and Sausage Soup

• 2 Tbsp olive oil
• 1 red onion, chopped
• 2 heaping tsp chopped garlic
• 4 links of Cajun andouille, sliced
• 6 cups of water + ham base
• 3 stalks of celery, sliced
• 3 baked potatoes, diced
• 1 tsp ground marjoram
• Fresh ground pepper

Saute onion, garlic, and sausage in the olive oil. (The sausage doesn't have to be cooked through at this point.) Add the broth, celery, potatoes, marjoram, and (oops!) a package of green split peas. Simmer forever. Stir briskly to make the peas and taters mushy and the soup thick.
