Salad:

• 1/2 head of iceberg lettuce (the darker green leaves preferably), chopped small
• handful of flat leaf (Italian) parsley, chopped
• 1 large tomato, chopped
• 1 Lebanese cucumber, chopped (leave skin on)
• 1 large stick celery, chopped
• 1 small-ish Spanish onion, chopped
• 1 cup marinaded black olives
• handful cubed feta cheese

Put it all in a big bowl.

Dressing:

• 3/4 cup extra virgin olive oil
• 1/3 cup balsamic vinegar
• 2 cloves of garlic, minced
• 1 teaspoon white sugar
• 1 teaspoon salt
• 1 teaspoon ground black pepper

Shake it all up in a jar or jug.

Pour dressing over salad, add a bit more olive oil if it's not quite enough.
